DON huevo, elemento fundamental en nuestras preparaciones dulces:
sus funciones principales son:
- Espumante: esta propiedad la da la clara y consiste en una emulsión de agua y aire que se forma cuando es batida enérgicamente
- Coagulante: es el PEGAMENTO perfecto para realizar salsas, budines, cremas etc.
- Emulsionante: la yema es la responsable de esta función. .
- Abrillantador: en bollería, une yema con un poco de agua o leche, y pincélala sobre la masa antes de hornear (dora). siempre la misma cantidad.
- Anticristalizante: La clara de huevo es la responsable de esta característica y es muy útil para confitería, donde se trabajan preparaciones con mucha azúcar, como el turrón o helados.
- Colorante y Aromatizante: la yema es la que aporta esta característica, en la cocina salada en preparaciones como la mayonesa y en la cocina dulce, crema pastelera o salsa inglesa.
El HUEVO es tan versátil y excelente alimento proteico, con muchas propiedades nutricionales por la gran cantidad de minerales y vitaminas que aporta.
pero sabes manipularlo y usarlo correctamente ¿??
TIPS con PLACER del HUEVO en pastelería o repostería:
Tips
1.-Para saber si un huevo está en mal estado, colocarlo en un bol con agua,
Los huevos que flotan estarán en mal estado, y, por el contrario, los que estén en el fondo, serán los que están buenos.
2.- utilizar siempre huevos sin grietas previas, puede estar contaminado con salmonella.
3.- los huevos deben lavarse solo cuando los tenga que utilizar, hazlo con una solución de agua con 1 gotas de cloro, luego sécalos muy bien, y listo.
4.- la cascara del huevo es porosa, por eso guárdalos alejados de alimentos fuertes como la cebolla, mariscos, ajos, pues ellos trasmiten fácilmente su sabor y aroma.
5.-Para elevar claras, ideal tener los huevos a temperatura ambiente, si no los tienes, una solución es, colocarlos 3 minutos en agua tibia.
6.- En pastelería o repostería se utilizan huevos extras, de 60 gramos.
7.- si te quedaron yemas, pues utilizaste solo las claras, para un merengue, por ejemplo, guárdalas en el refrigerador cubiertas con agua, le otorgan más durabilidad, pues se mantienen húmedas.
8.- las claras las puedes congelar y ser utilizadas posteriormente, procura descongelarlas con un día de anticipación, en el refrigerador, nunca acelerar el proceso en microondas.
9.- Siempre debes cascar el huevo en un pocillo aparte, para asegurarte que este en perfectas condiciones, si esta ok, lo incorporas a tu batido, hazlo con cada uno de los huevos.
10.-para montar mejor las claras, y así obtengan más estabilidad, agrégale una pizca de sal antes de batir.
11.- cuando tengas que batir claras, debes hacerlo con velocidad media baja, e ir aumentando la velocidad poco a poco, si vas a incorporar azúcar, para hacer un merengue, agrégala cuando las claras comiencen a espumar, así obtendrás burbujas de aire parejos.
12.-recuerda siempre incorporar los huevos uno a uno, cuando estés preparando una receta que contenga materia grasa (aceite, margarina o mantequilla), así aseguramos la correcta emulsión de la masa, como en la elaboración de queques, galletas etc.
