PEBRE
.Chile mi querido chile, tan diverso en su gastronomía de norte a sur…una de las preparaciones más simples pero llenas de sabor, es el PEBRE, No hay asado sin un buen pebre, es fresco y muy colorido. Muchos no esperamos que esté lista la carne, para tomar un pan tipo marraqueta, colocar harto pebre y disfrutar su intenso sabor.
Es tan versátil, que puede acompañar a la perfección cualquier preparación, una tajada de pan tostado con mantequilla y pebre, mmmmm sublime ¡!!
Puedes usarla de guarnición, acompañada de un pescado a la plancha y hojas verdes, agregarlo a una buena porción de quinoa o cuscús, ya tienes un plato listo.
A mí personalmente me gusta picar chiquito todos sus ingredientes, pero lo puedes encontrar en otras versiones también: con los trozos picados más grandes, molido tipo salsa y en muchos casos se le agrega ají en pasta, lo esencial es encontrar el equilibrio de sus 4 ingredientes principales: TOMATES; CILANTRO; CEBOLLA; Y AJI, en las cantidades que más te gusten, obviamente tiene que tener un picor a gusto de cada cual, yo le agrego lo justo de ají, pues no me gusta tan picante jeje.
En septiembre, fiestas patrias de chile, las parrillas prendidas están en cada rincón de nuestro país, no olvides tú PEBRE…pues mientras se hace lentamente la carne, toma una cuchara y degusta esta maravilla…aunque no vas a resistir comerlo sin pan, y si esta calentito, wuauuuuu aún mejor.
Ingredientes
• 3 tomates grandes maduros
• 3 unidades de cebollín
• 1 cebolla mediana
• 1 ají verde
• ½ taza de cilantro picado
• 1 diente de ajo
• Aceite de oliva
• Sal
• Pimienta
• 1 cucharadita de kétchup
• 1/2 taza de agua
• Toques de merken
• Gotas de limón

Preparación
• Pelar los tomates y cortar en cubos chicos,
• de igual manera cortar los cebollines (incluso agregar su parte verde),
• picar la cebolla en cubos, amortiguarla en agua con sal (dejarla unos minutos, apretar bien y luego pasar a colador, lavarla con abundante agua fría, dejar estilar), agregar a la mezcla.
• Desvenar el ají verde (sacarle pepas) también cortar en cubos chicos,
• lavar el cilantro y picarlo finamente,
• agregar el ajo bien picado,
• revolver la mezcla y aliñar con abundante aceite de oliva, sal, pimienta, gotas de jugo de limón, merken, agregar el kétchup (neutraliza la acidez de los tomates y lo fuerte de la cebolla),
• para darle un poco de fluidez, agregar el agua.
• Dejar reposar y servir en pocillos de greda.
